Crockpot Spaghetti Sauce

We started with this recipe:

2 lb bulk Italian pork sausage or ground beef
2 large onions, chopped (2 cups)
2 cups sliced fresh mushrooms (6 oz)
3 cloves garlic, finely chopped
1 can (28 oz) Muir Glen® organic diced tomatoes, undrained
2 cans (15 oz each) tomato sauce
1 can (6 oz) tomato paste
1 tablespoon dried basil leaves
1 teaspoon dried oregano leaves
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon crushed red pepper flakes

And we modified it a little bit. We added meatballs, used less onions and no tomatoes or red pepper flakes. I used Italian Seasoning from Penzey's and a bay leaf. We cooked it in the crock pot for 6 hours or so. It was SOOOOO good!!!

Santa Fe Chicken

I got this from Mom Miskin, who got it from Jeanne, who got it from Jori. Give credit where it's due, because this stuff is great!

In a crockpot, combine

1 can black beans, drained and rinsed
2 cups frozen corn (or canned)
2 cups med salsa ( or hot, if you like. We use Pace)
3 chicken breasts, cut into bite sized pieces

If you have 3 hours or so, put it all on high. If you have all day, put it on low.

Half hour before eating, add

1 block (8 oz.) cream cheese
1 cup cheddar cheese

When the cheese is all melted, eat! We like it with tortilla chips. SO GOOD!

Lasagna a la Mama Miskin

First cook a pot of lasagna noodles, then

Brown together in pan
1 lb hamburger
1 diced onion
some garlic

Add
1 lg can stewed tomatoes
1 sm can tomato paste
1/2 cup water

Simmer together for 30 min, this is your red sauce

In another pan, sauté
1 diced onion with
4 Tbs butter until brown

Add
3 Tbs flour
1 cup parmesan cheese
SLOWLY add
2 cups milk

Stir until cheese is melted, this is your white sauce

Grate lots of cheddar cheese

Start with noodles, then layer red sauce, white sauce and cheddar in a casserole dish until the dish is full. Top with any leftover cheese. Bake in oven for 30 minutes at 350 degrees. YUM!
